Eating our way through week 2/27/12

Every week we have been sharing our WoW. This is when something happens with our culinary program that goes above and beyond. We receive many wonderful comments from the participants (which as always, have become friends), as well as businesses picking up the program.


Our WoWs of this week includes LJ's Fitness Center in Womelsdorf has picked up the program (see the end of the blog for details) and Judy Warner, freelancer for the LDNews, wrote an article on a lady's night out, cooking style : http://www.ldnews.com/valleylife/ci_20088107 I am so happy people understand what we are trying to achieve; Changing the world, one bite at a time.


This week's menu: Walnut Hors D'Oeuvres, Minestrone Soup with Pumpkin, Almost Salad Nicoise,  Chicken Salad Waldorf Style, Roasted Root Salad, Surprise Brownies.


Walnut Hors D'Oeuvres
Chop beans, walnuts, red pepper, onion, ginger and cilantro. Add a drizzle of  soy sauce, stir to mix.
 
Blanch collard leaves and add the bean mixture.
  
Roll

Slice into bite-size pieces, almost sushi-esque

Almost Salad Nicoise
You will need wedges of salad greens, we used Romaine. Add a half of a hard boiled egg if ovo-vegetarian, a few oil cured olives, and red onion.
  
Steam green beans, add red pepper, sundried tomatoes, capers and a wedge of lemon.
Drizzle with dark green olive oil, squeeze lemon over the all. 
 
Chicken Salad Waldorf Style
-Sans chicken! We used organic whole grain tempeh (millet, barley, brown rice and a little soy).
Chop into chicken salad type pieces. We proceeded to make our own mayo; cannelini beans, Dijon mustard, lemon juice and a little water to lossen it. Add to the "chicken". Stir in dried cherries, pecans, carrots, celery,onion, poultry seasoning and parsley.

Add greens - of course!


Scoop the chicken salad on top of the lettuce, add sliced apples and grapes to add sweetness and more fiber.

Roasted Root Salad (altough we sauteed it).
We used rutebaga, turnips, jicama, radishes, onion, carrots and sweet potatoes.
 
I am always blown away by the beautiful colors.

Roast or saute until soft and cararmelized.

Add olive oil, lemon juice, cilantro and horseradish to a ramiken.

Pour.
 
Surprise Brownies
Surprise! More beans. Mash black beans and prunes.
 
Add cocoa powder, agave, instant decaf coffee, and Enjoy Life chocolate chips (only 3 ingredients comprise this delectable sweet sin of a chocolate mini morsels - a must have on / in hand :)

Mix everthing together.
 
Don't forget to get your hands dirty!

Add extra chocolate chips on top if you have an extra sweet tooth.
 
Yeah, we know.
 
Or add sliced almonds or your fav nut or seed.




The following pictures are from our Everything Herbal Class at the Goggleworks.
We make an Entree, side and desrrt plus a craft and natural body care product - all with herbs, of course.
To make a feet softening scrub we started with a base of oats, cornmeal, baking soda,  and wheat germ.
Cut is coconut oil, lanolin, honey to resemble wet sand. Add the healing/softening/astringent herbs such as: calendula, chamomoile, comfrey, eucalyptus, fennel, lavender, lemon balm, peppermint, rose, rosemary, and sage.


Mix together. Use a small handful, moisten with a little water and gently massage our hard working feet, hands, or try on legs to slough off dead skin to ready our body for the summer.

We also made a moth / insect repelling potpourri.
Cedar shavings, cloves, eucalyptus, lavender, lemon peel, lemon verbena, peppermint, rosemary and thyme.  


Stuff into baby socks

Or fancy organza bags, muslin bags or old hankies, tie off with ribbon. Add to pockets of woolens or into the container of stored seasonal clothes.

  •  All of the recipes are vegan and or raw but we offer dairy cheese for those who have digestive issues with the faux cheese, and sometimes we offer honey, which make the classes vegetarian

  •  Everything is supplied including cutting board, recipes, food and knives. Our knives are not the sharpest in the block, you may bring your own
